Step-by-Step Instructions for Baked Breakfast Tacos
  1. Preheat your oven to 375°F (190°C). Line a baking sheet with foil and bake the bacon for about 10 minutes until crispy. Chop into bite-sized pieces.
  2. In a skillet over medium heat, add canola oil and cook the cubed potatoes with taco seasoning for 15–20 minutes, stirring occasionally, until golden and tender.
  3. Warm corn tortillas to make them pliable and arrange them in a 13x9-inch baking dish.
  4. Crack and beat the eggs in a bowl. In a skillet, cook the egg mixture on medium heat until just set, about 5 minutes.
