Step-by-Step Instructions
  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine chocolate graham cracker crumbs, melted unsalted butter, and granulated sugar. Press firmly into a 9-inch springform pan.
  3. Bake the crust for 10 minutes. Allow it to cool completely before adding the filling.
  4. In a large bowl, beat the softened cream cheese until smooth. Gradually add granulated sugar, mixing until combined. Incorporate eggs one at a time, then add vanilla extract.
  5. Melt dark chocolate, milk chocolate, and white chocolate separately. Mix each type of melted chocolate into its corresponding portion of the batter, followed by sour cream.
  6. Pour the dark chocolate filling into the cooled crust, smooth it out, then layer with milk chocolate and white chocolate fillings.
  7. Bake for 55-60 minutes until edges are set, but center is slightly jiggly.
  8. Once baked, turn off the oven and cool the cheesecake gradually for about 1 hour, then at room temperature for another 30 minutes.
  9. Refrigerate for at least 4 hours or overnight. Garnish with whipped cream and chocolate shavings before serving.
