Step-by-Step Instructions
- Preheat your oven to 325°F (160°C).
- In a mixing bowl, combine chocolate graham cracker crumbs, melted unsalted butter, and granulated sugar. Press firmly into a 9-inch springform pan.
- Bake the crust for 10 minutes. Allow it to cool completely before adding the filling.
- In a large bowl, beat the softened cream cheese until smooth. Gradually add granulated sugar, mixing until combined. Incorporate eggs one at a time, then add vanilla extract.
- Melt dark chocolate, milk chocolate, and white chocolate separately. Mix each type of melted chocolate into its corresponding portion of the batter, followed by sour cream.
- Pour the dark chocolate filling into the cooled crust, smooth it out, then layer with milk chocolate and white chocolate fillings.
- Bake for 55-60 minutes until edges are set, but center is slightly jiggly.
- Once baked, turn off the oven and cool the cheesecake gradually for about 1 hour, then at room temperature for another 30 minutes.
- Refrigerate for at least 4 hours or overnight. Garnish with whipped cream and chocolate shavings before serving.

Notes
Quality chocolates enhance flavor. Ensure ingredients are at room temperature for best consistency. Gradual cooling prevents cracks.
