- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, combine granulated sugar, light corn syrup, melted unsalted butter, pure vanilla extract, and a large egg. Stir until well blended.
- Fold in the chopped pecans until evenly coated.
- Unroll the crescent dough and cut into triangles. Spoon 2-3 tablespoons of pecan mixture onto each triangle.
- Roll each triangle from the wide end towards the pointed tip and place seam-side down on the baking sheet.
- Bake for 8 minutes, then brush tops with reserved mixture and bake for an additional 5 minutes.
- Optionally sprinkle with additional chopped pecans on top after baking.
