- In a small skillet, melt 1/2 tablespoon of butter over medium heat. Add 1/2 cup of panko breadcrumbs, stirring frequently for about 3–4 minutes until golden brown.
- Wash and slice 3–4 mini seedless cucumbers into 1/4-inch rounds and transfer to a large mixing bowl.
- Add 1/2 cup of freshly shaved Parmesan cheese, 1/4 cup of crumbled bacon, and the toasted panko to the bowl with cucumbers. Pour in desired amount of Caesar dressing and toss gently.
- Garnish with additional shaved Parmesan, crumbled bacon, and toasted breadcrumbs before serving.
