Preparation Steps
  1. Gather your ingredients: fresh cucumbers, granulated sugar, sesame seeds, garlic, green onions, soy sauce, rice vinegar, Chinese chili oil, sesame oil, and salt.
  2. In a mixing bowl, combine sugar, sesame seeds, crushed garlic, and chopped green onions. Stir in soy sauce, rice vinegar, chili oil, and sesame oil until the dressing is glossy.
  3. Trim cucumber ends and spiral cut or slice into thin rounds for even pieces.
  4. Sprinkle sliced cucumbers with salt and massage to release moisture. Let sit for 8-10 minutes.
  5. Rinse cucumbers in a colander under cold water and pat dry to remove salt and excess moisture.
  6. In a large bowl, combine cucumbers with the dressing and toss gently. Let marinate in the fridge for 10 minutes before serving.
