  • 1 can black beans drained and rinsed
  • 1 can diced tomatoes
  • 2 cups vegetable broth can swap for water
  • 1 onion finely chopped
  • 1 bell pepper finely chopped
Flavor
  • 3 cloves garlic minced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt to taste
  • 1 teaspoon pepper to taste
Optional Toppings
  • 1 avocado sliced
  • 1/4 cup cilantro chopped
  • 1 cup cheese optional, for non-vegan

Preparation
  1. Peel and dice the sweet potatoes, chop the onion and bell pepper, and mince the garlic.
  2. Layer the sweet potatoes in the crock pot.
  3. Add the black beans, diced tomatoes, vegetable broth, and top with onions, bell pepper, and garlic.
Cooking
  1. Sprinkle in the chili powder, cumin, salt, and pepper. Mix gently.
  2. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  3. Check the tenderness of sweet potatoes halfway through the cook time.
Serving
  1. Once cooked, stir the chili, taste, and adjust seasoning if needed.
  2. Serve hot with optional toppings.
