  • 2 tbsp Oil for Cooking Canola, vegetable, or olive oil

  • 1/2 cup Cheese Grated
  • 1/2 cup Bell Peppers or Corn Diced
  • 1 tsp Spices Paprika or cumin suggested

Step-by-Step Instructions for Squash Patties
  1. Heat approximately 2 tablespoons of oil in a medium sauté pan over medium heat for about 2 minutes until it shimmers.
  2. In a large bowl, combine finely chopped yellow squash, onion, beaten eggs, all-purpose flour, salt, and black pepper. Mix thoroughly until well blended.
  3. Scoop out about 2 tablespoons of the mixture and gently shape it into a patty. Repeat without overcrowding the pan.
  4. Place formed patties in the hot frying pan, fry each for 2-3 minutes until golden, flip gently, fry for another 2-3 minutes.
  5. Remove patties once golden brown, place on paper towel-lined plate to absorb excess oil. Allow to cool slightly before serving.
