Step-by-Step Instructions for Crispy Potato Roast
  1. Preheat your oven to 375°F (190°C).

  3. Using a pastry brush, coat the bottom of a 9-inch round baking dish with the butter and olive oil mixture.
  4. Slice russet potatoes thinly, ideally using a mandoline for even slices.
  5. Arrange the thinly sliced potatoes vertically in the baking dish, interspersing shallots among the layers.
  6. Sprinkle the layered potatoes and shallots with coarse salt and red-pepper flakes if desired.
  7. Place the dish in the oven and bake for 1 hour and 15 minutes until edges are golden brown.
  8. Add fresh thyme sprigs atop the dish and bake for an additional 35 minutes.
