  • 1 cup Napa Cabbage finely chopped; mushrooms or tofu can work for vegetarian fillings
For the Dumplings
  • 20 pieces Round Dumpling Wrappers giant gyoza wrappers are preferred
  • 2 tbsp Vegetable Oil for frying
  • 1/4 cup Water for steaming

Method
 

Step‑by‑Step Instructions
  1. In a large mixing bowl, combine ground pork, chopped scallions, minced ginger, and garlic. Add soy sauce, sesame oil, rice vinegar, sugar, ground white pepper, and finely shredded napa cabbage. Mix everything together until all ingredients are well incorporated.
  2. Take a round dumpling wrapper and lay it flat. Spoon about 1 tablespoon of filling into the center. Moisten the edges with water, fold the wrapper, and pinch to seal.
  3. Heat vegetable oil in a nonstick skillet over medium-high heat until shimmering.
  4. Arrange the sealed dumplings flat side down in the skillet. Fry for about 2-3 minutes until golden brown.
  5. Pour in enough water to cover the bottom of the skillet and cover with a lid. Steam for 5-6 minutes.
  6. Remove the lid and gently smash each dumpling with a spatula. Cook uncovered for an additional 2 minutes.
  7. Transfer the crispy dumplings to a serving plate and serve hot with your favorite dipping sauce.
