- Preheat your oven to 375°F (190°C) and prepare a baking sheet lined with parchment paper.
- Combine 8 ounces of crumbled feta, 1 tablespoon each of dill and mint, and the zest of half a lemon in a mixing bowl. Season with black pepper.
- Unroll phyllo pastry and keep covered with a damp cloth. Brush 2 sheets with olive oil, cut into 3-inch strips.
- Place 1 tablespoon of feta mixture at one end of a phyllo strip, fold edges, and roll tightly to secure filling.
- Arrange feta rolls on a baking sheet, brush with olive oil, and bake for 18-20 minutes until golden brown.
- While baking, prepare chili honey by combining honey, chili flakes, and a splash of lemon juice in a saucepan over low heat.
- Once baked, drizzle warm chili honey over rolls or serve on the side.
