  • 8 ounces Feta Cheese or goat cheese or ricotta
  • 1 tablespoon Dill finely chopped
  • 1 tablespoon Mint finely chopped
  • 0.5 units Lemon Zest from unwaxed lemon
For the Pastry
  • 1 pack Phyllo Pastry keep covered with a damp cloth
  • 0.25 cup Olive Oil for brushing
For the Drizzle
  • 0.5 cup Honey high-quality for best flavor
  • 1 teaspoon Chili Flakes adjust to taste

Method
 

Instructions
  1. Preheat your oven to 375°F (190°C) and prepare a baking sheet lined with parchment paper.
  2. Combine 8 ounces of crumbled feta, 1 tablespoon each of dill and mint, and the zest of half a lemon in a mixing bowl. Season with black pepper.
  3. Unroll phyllo pastry and keep covered with a damp cloth. Brush 2 sheets with olive oil, cut into 3-inch strips.
  4. Place 1 tablespoon of feta mixture at one end of a phyllo strip, fold edges, and roll tightly to secure filling.
  5. Arrange feta rolls on a baking sheet, brush with olive oil, and bake for 18-20 minutes until golden brown.
  6. While baking, prepare chili honey by combining honey, chili flakes, and a splash of lemon juice in a saucepan over low heat.
  7. Once baked, drizzle warm chili honey over rolls or serve on the side.
