- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine halved baby potatoes with olive oil, dried oregano, garlic powder, salt, and black pepper. Toss until evenly coated.
- Transfer the seasoned potatoes onto a baking tray, spreading them out in a single layer.
- Roast the potatoes in the oven for 30-35 minutes, flipping halfway through.
- Remove from the oven and scatter crumbled feta cheese over the top. Bake for an additional 5-10 minutes until the feta melts slightly.
- Drizzle fresh lemon juice over the roasted potatoes and add lemon zest.
- Garnish with freshly chopped parsley and serve warm.
