  • 1/2 tsp black pepper freshly ground
For the Feta
  • 1 cup feta cheese crumbled
For Garnish
  • 1/4 cup fresh parsley chopped
  • 1 lemon lemon zest and juice for brightness

Method
 

Instructions
  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine halved baby potatoes with olive oil, dried oregano, garlic powder, salt, and black pepper. Toss until evenly coated.
  3. Transfer the seasoned potatoes onto a baking tray, spreading them out in a single layer.
  4. Roast the potatoes in the oven for 30-35 minutes, flipping halfway through.
  5. Remove from the oven and scatter crumbled feta cheese over the top. Bake for an additional 5-10 minutes until the feta melts slightly.
  6. Drizzle fresh lemon juice over the roasted potatoes and add lemon zest.
  7. Garnish with freshly chopped parsley and serve warm.
