Method
 

Preparation Steps
  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, take your halved baby potatoes and drizzle them with olive oil. Add dried oregano, garlic powder, salt, and pepper. Toss until the potatoes are fully coated.
  3. Spread the seasoned potatoes in a single layer on a parchment-lined baking sheet. Avoid overcrowding to ensure roasting.
  4. Roast the potatoes for 30-35 minutes, turning halfway for even browning until golden and crispy.
  5. Remove from the oven and sprinkle crumbled feta cheese over the top of the potatoes. Return to the oven for 5-8 minutes.
  6. Drizzle the freshly squeezed lemon juice and zest over the hot potatoes and toss gently.
  7. Garnish with chopped fresh parsley and serve warm.
