Preparation Steps
- Preheat your oven to 425°F (220°C).
- In a mixing bowl, take your halved baby potatoes and drizzle them with olive oil. Add dried oregano, garlic powder, salt, and pepper. Toss until the potatoes are fully coated.
- Spread the seasoned potatoes in a single layer on a parchment-lined baking sheet. Avoid overcrowding to ensure roasting.
- Roast the potatoes for 30-35 minutes, turning halfway for even browning until golden and crispy.
- Remove from the oven and sprinkle crumbled feta cheese over the top of the potatoes. Return to the oven for 5-8 minutes.
- Drizzle the freshly squeezed lemon juice and zest over the hot potatoes and toss gently.
- Garnish with chopped fresh parsley and serve warm.
