Step-by-Step Instructions
- Spray a small skillet with cooking oil or olive oil and crumble the feta cheese evenly across the bottom. Place the skillet over medium heat and allow the cheese to cook undisturbed for about 2 minutes until it starts to sizzle.
- Carefully crack a large egg right in the center of the sizzling feta. Cook the egg for 3 to 5 minutes, keeping an eye on the edges.
- As the egg cooks, sprinkle a dash of dried oregano and a pinch of red pepper flakes over the top. Continue cooking until the egg reaches your desired doneness.
- While the egg is finishing, warm your small tortilla or slice of bread in another pan or microwave for about 1 minute.
- In a small bowl, smash the avocado with a fork until creamy and add lemon juice. Spread this mixture generously over your warm tortilla.
- Once the egg is cooked and the feta has formed a beautiful crust, gently transfer the egg and feta onto the prepared tortilla.
- Top your Crispy Feta Fried Eggs with a handful of pickled onions for tang and a drizzle of chili oil for a kick. Serve immediately.

Notes
For best results, use block feta for better texture. Store any leftovers in an airtight container in the fridge for up to 2-3 days.
