  2. Using your hands, scoop about 2 tablespoons of the mixture and form small patties, about 1 inch thick. Repeat until the entire mixture is used up, which should yield around 10-12 patties. Coat each patty generously in breadcrumbs.
  3. Heat 3 tablespoons of olive oil in a large non-stick skillet over medium heat. Place the patties in a single layer and fry for 3-4 minutes on each side until golden brown and crispy.
