- In a large mixing bowl, combine 2 cups of cottage cheese, 1 beaten egg, ½ cup of grated Parmesan cheese, ⅓ cup of all-purpose flour, and ¼ cup of chopped green onions. Add 2 tablespoons of fresh chopped parsley or dill, 1 teaspoon each of garlic powder and onion powder, ½ teaspoon of baking powder, along with salt and pepper to taste. Stir until well blended.
- Using your hands, scoop about 2 tablespoons of the mixture and form small patties, about 1 inch thick. Repeat until the entire mixture is used up, which should yield around 10-12 patties. Coat each patty generously in breadcrumbs.
- Heat 3 tablespoons of olive oil in a large non-stick skillet over medium heat. Place the patties in a single layer and fry for 3-4 minutes on each side until golden brown and crispy.
- Transfer the cooked patties to a paper towel-lined plate to absorb excess oil. Serve warm with optional toppings.
