  • 2 green onions use white part for cooking, green part for garnish
  • 1 tablespoon ginger minced fresh

Method
 

Step-by-Step Instructions
  1. In a bowl, mix together chicken broth, lemon juice, rice vinegar, Shaoxing wine, sugar, cornstarch, lemon zest, and salt until smooth.
  2. In a large bowl, mix chicken pieces with vegetable oil and a sprinkle of salt. Let marinate for 15 minutes.
  3. Stir in beaten egg and coat chicken with cornstarch evenly.
  4. Heat vegetable oil in a skillet until shimmering. Fry chicken pieces until golden brown, about 2-3 minutes per side.
  5. Transfer cooked chicken to paper towels to drain and cool for 2-3 minutes.
  6. In the same skillet, sauté chopped green onions and minced ginger until fragrant.
  7. Pour prepared sauce into the skillet and cook until thickened, about 2-3 minutes.
  8. Add fried chicken back into the skillet and toss to coat in sauce. Serve garnished with green onion tops.
