- Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Wash and dry the baby potatoes, then cut them in half.
- Chop the bacon into small pieces and set aside.
- In a mixing bowl, combine the halved potatoes with olive oil, garlic powder, smoked paprika, salt, and black pepper.
- Spread the seasoned potatoes on the prepared baking sheet and scatter the chopped bacon on top.
- Roast in the oven for 30-35 minutes, flipping halfway through.
- In the last 5 minutes of roasting, drizzle honey over the potatoes and bacon.
- Remove from the oven and cool slightly before serving.
