  1. Begin by rinsing the cod fillets under cold water, then pat them dry with paper towels. Season both sides generously with salt and pepper.
  2. In a mixing bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, dried oregano, paprika, salt, and pepper. Stir until well blended.
  3. In another bowl, whisk together mayonnaise, Dijon mustard, and lemon juice until smooth and creamy.
  4. Spread the sauce over one side of each cod fillet, ensuring even coverage.
  5. Press each fillet, sauce-side down, into the breadcrumb mixture.
  6. Preheat the air fryer to 400°F (200°C) for about 5 minutes.
  7. Carefully place the coated cod fillets in the air fryer basket, ensuring space between them.
  8. Cook for 10-12 minutes, checking for golden-brown crust. The internal temperature should reach 145°F (63°C).
  9. Garnish with freshly chopped parsley and serve immediately.
