  • 2 pounds Chicken Breasts cut into cutlets or use pre-cut
  • 2 Eggs for a vegan substitute, mix flaxseed meal with water
For the Coating
  • 1 cup Seasoned Panko Breadcrumbs can be switched with regular breadcrumbs
  • 1/2 cup Grated Parmesan Cheese substitute with nutritional yeast for dairy-free
  • 1 tablespoon Italian Seasoning mix dried basil and oregano if you're out
  • 1 teaspoon Granulated Garlic consider using fresh garlic if preferred
  • 1 teaspoon Chili Powder feel free to adjust or swap with cayenne
  • 1 teaspoon Kosher Salt adjust based on dietary preferences
  • 1/2 teaspoon Ground Black Pepper adjust based on dietary preferences
For the Topping
  • 1 cup Tomato Sauce either homemade or store-bought
  • 1 cup Shredded Mozzarella Cheese for a non-dairy option, use dairy-free cheese
For Garnishing
  • 1/4 cup Chopped Basil optional but adds fresh brightness
  • 1/4 cup Chopped Parsley optional but adds fresh brightness

Method
 

Step-by-Step Instructions
  1. Preheat your air fryer to 390°F (199°C).
  2. In one shallow bowl, combine the seasoned panko breadcrumbs, grated Parmesan cheese, Italian seasoning, granulated garlic, chili powder, kosher salt, and ground black pepper. In a separate bowl, whisk the eggs until beaten.
  3. Pat chicken cutlets dry. Dip in egg mixture and then coat with breadcrumb mixture, pressing down gently.
  4. Place coated chicken cutlets in air fryer basket. Spray tops lightly with olive oil. Cook for 5 minutes, flip, spray again, and air fry for another 5 minutes until golden and crispy.
  5. Spread tomato sauce over cooked chicken cutlets. Top generously with mozzarella cheese and return to air fryer for an additional 2 minutes to melt cheese.
  6. Let rest for 5 minutes before serving with a side salad or whole grain pasta.
