  • 4 cups Sweet Potatoes sliced ⅜ inch thick
  • 3 tablespoons Butter for sautéing
  • 3 cloves Garlic minced
  • 1 medium Red Onion diced
  • ¼ cup All-Purpose Flour
  • 1 cup Heavy Cream or half and half
  • 1 cup Half and Half or whole milk
  • 2 tablespoons Fresh Rosemary chopped
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Ground Sage
  • 1 teaspoon Kosher Salt
  • ½ teaspoon Black Pepper
  • ¼ teaspoon Fresh Nutmeg
For the Cheeses
  • 1 cup Asiago Cheese shredded
  • 1 cup Smoked Gouda Cheese shredded
  • 1 cup Colby Jack Cheese shredded

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Melt butter in a saucepan, then sauté garlic and onion for about five minutes.
  2. Stir in flour and cook for a minute. Gradually whisk in heavy cream and half and half, thickening the sauce.
  3. Peel and slice sweet potatoes into ⅜ inch rounds using a mandoline.
  4. Grease a baking dish with butter, then arrange the sweet potato slices in it.
  5. Stir in half of the cheeses into the cooled sauce, then combine well.
  6. Pour the sauce over the sweet potatoes, then add the remaining cheese on top.
  7. Cover with foil and bake for 45 to 50 minutes until the sweet potatoes are tender.
  8. Remove foil and bake uncovered for an additional 15 to 20 minutes until golden brown.
  9. Let the gratin rest for 10 to 15 minutes before serving.
