  • ¼ cup grated Parmesan cheese omit for dairy-free version

Method
 

Step‑by‑Step Instructions
  1. Season chicken breasts with garlic powder, onion powder, smoked paprika, salt, and black pepper. Let sit while preparing rice.
  2. Rinse rice under cold water until clear. Set aside.
  3. Combine rinsed rice with chicken broth and a pinch of salt in a saucepan. Bring to boil, then cover and simmer for 18 minutes.
  4. Heat olive oil in a skillet. Sear chicken for 5-7 minutes on each side until golden brown. Transfer to a plate.
  5. In the same skillet, melt butter and whisk in flour. Cook for 1-2 minutes until pale blonde.
  6. Gradually add milk and chicken broth while whisking. Cook until sauce thickens, about 3-5 minutes.
  7. Stir in cheddar cheese and Parmesan until melted and smooth. Adjust seasoning to taste.
  8. Return chicken to the skillet and coat with sauce. Cover and simmer on low heat for 15-20 minutes.
  9. Serve with a scoop of rice topped with creamy chicken and sauce. Garnish with fresh herbs if desired.
