Preparation
- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add 1 chopped onion and cook for about 5 minutes until translucent.
- Add 3 cloves of minced garlic and cook for an additional minute until fragrant.
- Introduce 8 ounces of sliced mushrooms to the skillet and cook for 8-10 minutes until browned, seasoning with thyme, oregano, salt, and pepper.
- If using, pour in ½ cup white wine and let it evaporate for 2-3 minutes, then stir in 1 pint halved grape tomatoes and cook until softened.
- In a saucepan, melt 4 tablespoons of butter, whisk in ¼ cup flour and cook until golden.
- Gradually whisk in 2 cups of warmed milk until the sauce thickens. Season with nutmeg, salt, and pepper.
- Preheat the oven to 375°F (190°C) and cook the lasagna noodles according to package instructions.
- Spread Bechamel sauce in a baking dish, layer with noodles, mushroom mixture, spinach, mozzarella, and parmesan; repeat layers.
- Cover and bake for 25 minutes, uncover and bake for another 20 until golden. Let it rest for 10 minutes before slicing.
