- In a large pot, heat 2 tablespoons of olive oil over medium-high heat. Once shimmering, add 1 chopped onion and sauté for 4-5 minutes until it is soft and translucent.
- Stir in a 14 oz can of fire-roasted tomatoes, 3 minced garlic cloves, 2 diced carrots, and 1 diced potato along with 1 teaspoon each of dried oregano, ground cumin, and smoked paprika. Cook for another 1-2 minutes until aromatic.
