  • 1 can Rotel tomatoes drained
  • 1 medium bell pepper diced
  • 1 cup shredded cheddar cheese can substitute with Monterey Jack or pepper jack
  • 2 cups Fritos for crunchy texture
For the Dressing
  • 1 cup sour cream or Greek yogurt
  • ¼ cup olive oil
  • ½ teaspoon salt to taste
  • ½ teaspoon pepper freshly cracked
  • ½ teaspoon garlic powder or fresh garlic
  • ½ teaspoon onion powder or chopped green onions
  • ½ teaspoon cumin

Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together sour cream, olive oil, salt and pepper, garlic powder, onion powder, and cumin until smooth and creamy.
  2. In a large mixing bowl, combine corn, black beans, Rotel tomatoes, and diced bell pepper. Gently fold in shredded cheddar cheese until well mixed.
  3. Pour the prepared dressing over the salad and fold until evenly coated.
  4. Just before serving, add Fritos and gently fold to maintain their crunch.
  5. Garnish with additional Fritos or chopped cilantro and serve immediately.
