Method
 

Preparation Instructions
  1. Hard boil two eggs: place in a pot, cover with cold water, bring to a boil, and simmer for 9-12 minutes. Transfer to an ice bath for 5 minutes, peel and mash.
  2. Slice one Roma tomato in half, deseed, and dice into small pieces. Thinly slice two green onions.
  3. In a bowl with the mashed eggs, add tomatoes, green onions, and shredded lettuce. Incorporate mayonnaise, season with salt and pepper, and stir until combined.
  4. Spread softened butter on one side of each slice of bread.
  5. On unbuttered sides, spread the egg salad mixture evenly. Top with another slice of bread, buttered side up.
