Step-by-Step Instructions
  1. Place the chicken breasts in the bottom of your crockpot, evenly spaced.
  2. In a separate bowl, combine the cream cheese and chicken broth until smooth. Pour over the chicken.
  3. Add sun-dried tomatoes, minced garlic, and herbs/spices. Stir gently to combine.
  4. Cover the crockpot and cook on low for about 4 hours (5 hours for frozen chicken).
  5. About 20-25 minutes before serving, add the tortellini and stir gently.
  6. If the sauce is too thin, switch to high for 5-10 minutes to thicken.
  7. Shred the chicken in the crockpot and mix with the sauce. Serve warm, optionally topped with Parmesan or basil.
