- Pat dry the chicken and season with salt, pepper, and paprika. Set aside.
- Heat oil in a Dutch oven. Sear chicken for 5-7 minutes until golden. Remove and set aside.
- Sauté onion, carrots, and celery for 4-5 minutes until tender, then add garlic and cook for 1 minute.
- Add mushrooms and cook undisturbed for 5-6 minutes until caramelized. Stir and remove.
- Melt butter in the pot, whisk in flour, then add milk and broth gradually while whisking until thick.
- Stir in cheeses until melted, then mix in chicken, vegetables, and wild rice.
- Preheat oven to 350°F. Transfer mixture to a greased baking dish, top with cheese and panko.
- Cover with foil and bake for 30-35 minutes, uncovering for the last 5-10 minutes.
