For the Casserole
  • 1 lb boneless skinless chicken breasts or thighs substitute with cooked rotisserie chicken if needed
  • 8 oz baby Bella or cremini mushrooms avoid white button mushrooms
  • 1 cup fresh onion chopped
  • 2 cloves garlic minced
  • 1 cup celery finely diced
  • 1 cup carrots diced
  • 1 cup wild rice cooked al dente
For the Cream Sauce
  • 4 tbsp butter or vegan alternative
  • 1/4 cup all-purpose flour or cornstarch for gluten-free
  • 2 cups milk whole, almond or oat milk
  • 1 cup chicken broth or vegetable broth
  • 1 cup sharp cheddar cheese freshly grated
  • 1/2 cup Parmesan cheese or Gouda for variation
For the Topping
  • 1 cup panko breadcrumbs or crushed cornflakes for gluten-free
  • 1/4 cup Parmesan cheese for additional flavor

Method
 

Step-by-Step Instructions
  1. Pat dry the chicken and season with salt, pepper, and paprika. Set aside.
  2. Heat oil in a Dutch oven. Sear chicken for 5-7 minutes until golden. Remove and set aside.
  3. Sauté onion, carrots, and celery for 4-5 minutes until tender, then add garlic and cook for 1 minute.
  4. Add mushrooms and cook undisturbed for 5-6 minutes until caramelized. Stir and remove.
  5. Melt butter in the pot, whisk in flour, then add milk and broth gradually while whisking until thick.
  6. Stir in cheeses until melted, then mix in chicken, vegetables, and wild rice.
  7. Preheat oven to 350°F. Transfer mixture to a greased baking dish, top with cheese and panko.
  8. Cover with foil and bake for 30-35 minutes, uncovering for the last 5-10 minutes.
