Ingredients
  

For the Pasta and Veggies
  • 8 ounces Ziti Pasta can substitute with penne or fusilli
  • 2 cups Broccoli Florets can substitute with cauliflower or asparagus
For the Chicken
  • 1 pound Chicken Breasts can use chicken thighs
  • 1 tablespoon Italian Seasoning can replace with fresh herbs
For the Creamy Sauce
  • 2 tablespoons Olive Oil any cooking oil works
  • 4 tablespoons Unsalted Butter use salted butter if needed
  • 3 cloves Minced Garlic can use garlic powder in a pinch
  • 1 medium Shallot can substitute with onion
  • 1 cup White Wine or Chicken Broth use broth for non-alcoholic version
  • 1 cup Half-and-Half can use heavy cream
  • 1/2 cup Parmesan Cheese freshly grated is best
  • 1 tablespoon Lemon Zest adds brightness
For Seasoning
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Garlic Powder alternative to fresh garlic

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a rolling boil. Cook ziti pasta until al dente, adding broccoli in the last 3-4 minutes. Reserve pasta water before draining.
  2. In a bowl, coat cubed chicken breasts with olive oil, Italian seasoning, garlic powder, salt, and pepper. Pat dry for better browning.
  3. In a skillet, melt butter and sauté chicken for 6-8 minutes until golden brown and cooked through. Set aside once done.
  4. In the same skillet, melt remaining butter, add minced garlic and shallots, sauté until fragrant. Deglaze with white wine or broth.
  5. Add half-and-half and simmer for 3-4 minutes, then gradually incorporate reserved pasta water until a creamy consistency is achieved.
  6. Mix in cooked chicken and broccoli, then stir in Parmesan cheese until melted and well combined.
  7. Finish with fresh lemon zest before serving, adjusting seasoning if needed.

Notes
