Preparation Steps
- In a large pot, heat 2 tablespoons of olive oil over medium heat. Add chopped onion and bell peppers. Sauté for 5-7 minutes.
- Add minced garlic and cook for an additional minute.
- Add chicken breasts, Cajun seasoning, cumin, and smoked paprika. Cook for 5-7 minutes until chicken is no longer pink.
- Pour in chicken broth, add Great Northern beans, and diced green chiles. Stir to combine.
- Bring to a simmer, reduce heat to low, and cover. Simmer for 30-60 minutes, stirring occasionally.
- Stir in frozen corn and heat through for about 5 minutes.
- Optional: Stir in up to 1 cup of heavy cream or sour cream for creaminess.
- Season with salt and pepper to taste.
- Ladle into bowls and garnish with cilantro, cheddar cheese, sour cream or yogurt, and lime wedges.
