Preparation Steps
  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add chopped onion and bell peppers. Sauté for 5-7 minutes.
  2. Add minced garlic and cook for an additional minute.
  3. Add chicken breasts, Cajun seasoning, cumin, and smoked paprika. Cook for 5-7 minutes until chicken is no longer pink.
  4. Pour in chicken broth, add Great Northern beans, and diced green chiles. Stir to combine.
  5. Bring to a simmer, reduce heat to low, and cover. Simmer for 30-60 minutes, stirring occasionally.
  6. Stir in frozen corn and heat through for about 5 minutes.
  7. Optional: Stir in up to 1 cup of heavy cream or sour cream for creaminess.
  8. Season with salt and pepper to taste.
  9. Ladle into bowls and garnish with cilantro, cheddar cheese, sour cream or yogurt, and lime wedges.
