- Bring a large pot of salted water to a boil. Add linguine and cook for 9-11 minutes until al dente. Reserve a cup of starchy water, then drain and set aside.
- In a saucepan, melt butter over medium heat. Sauté minced shallot and garlic for 1 minute. Add Cajun seasonings and cook for 30 seconds.
- Pour in white wine and simmer for 3-4 minutes until reduced.
- Mix in lemon juice and cook for an additional minute.
- Reduce heat to low and gradually stir in heavy cream and half-and-half. Cook for 4-5 minutes until sauce thickens.
- Add Parmesan cheese and stir until melted and fully incorporated.
- Toss cooked linguine with the sauce, adjusting thickness with reserved pasta water.
- Serve garnished with chives or green onions and black pepper.
