Ingredients
  

For the Pasta
  • 6 oz Linguine can substitute with fettuccine or spaghetti
For the Sauce
  • 2 tbsp Butter or use olive oil
  • 2 cloves Minced Garlic fresh is best
  • 1 small Minced Shallot can use yellow onion
  • 1 tbsp Cajun Seasonings store-bought or homemade
  • 1/2 cup Dry White Wine or chicken broth for non-alcoholic
  • 1 tbsp Lemon Juice freshly squeezed
  • 1/2 cup Heavy Cream or half-and-half
  • 1/2 cup Half-and-Half or all heavy cream
  • 1/2 cup Freshly Grated Parmesan freshly grated preferred
  • to taste Freshly Cracked Black Pepper adjust as needed
  • 2 tbsp Chopped Chives/Green Onions for garnish

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a boil. Add linguine and cook for 9-11 minutes until al dente. Reserve a cup of starchy water, then drain and set aside.
  2. In a saucepan, melt butter over medium heat. Sauté minced shallot and garlic for 1 minute. Add Cajun seasonings and cook for 30 seconds.
  3. Pour in white wine and simmer for 3-4 minutes until reduced.
  4. Mix in lemon juice and cook for an additional minute.
  5. Reduce heat to low and gradually stir in heavy cream and half-and-half. Cook for 4-5 minutes until sauce thickens.
  6. Add Parmesan cheese and stir until melted and fully incorporated.
  7. Toss cooked linguine with the sauce, adjusting thickness with reserved pasta water.
  8. Serve garnished with chives or green onions and black pepper.
