- Season the skinless boneless chicken thighs generously on both sides with salt, freshly ground black pepper, paprika, and dried parsley.
- Heat a large skillet over medium-high heat and melt 2 tablespoons of butter until bubbling. Sear the chicken thighs for 4–5 minutes on each side until golden-brown.
- Transfer the browned chicken thighs to a plate and tent with foil to keep warm.
- In the same skillet, reduce heat to medium and add the remaining butter. Sauté the minced garlic for about 30 seconds until fragrant.
- Deglaze the skillet with warm chicken stock, then stir in honey and paprika. Simmer for 10–12 minutes until slightly thickened.
- Return the chicken thighs to the skillet and spoon the sauce over them. Simmer for 1–2 minutes to absorb flavors.
- Garnish with caramelized onions and cheddar cheese before serving.
