Ingredients
  

For the Pasta
  • 8 oz Rotini or Penne Pasta
For the Salad Mix
  • 6 slices Crispy Bacon can use turkey bacon or crispy tofu for a vegetarian twist
  • 1 cup Cherry Tomatoes halved
  • 1/2 cup Red Onion diced, can substitute with green onions
  • 1 cup Shredded Cheddar Cheese can use dairy-free cheese
For the Creamy Ranch Dressing
  • 1/2 cup Mayonnaise or Greek yogurt for a lighter version
  • 1/2 cup Sour Cream can substitute with plain yogurt
  • 1/4 cup Buttermilk can use milk with lemon juice or vinegar
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • to taste Salt
  • to taste Pepper
For Serving
  • 2 cups Chopped Romaine Lettuce added just before serving

Method
 

Cooking Steps
  1. Bring a large pot of salted water to a boil, add the pasta, and cook for 8-10 minutes until al dente. Drain and rinse under cold water.
  2. Heat a skillet over medium heat, add bacon slices, and cook for 5-7 minutes until golden brown. Drain excess grease and crumble the bacon.
  3. In a mixing bowl, combine mayonnaise, sour cream, and buttermilk, whisk until smooth. Add garlic powder, onion powder, salt, and pepper; mix well.
  4. In a serving bowl, combine the cooled pasta, crumbled bacon, cherry tomatoes, and red onion. Gently fold in cheddar cheese.
  5. Pour dressing over the pasta mixture and toss for 1-2 minutes until everything is well coated.
  6. Just before serving, gently mix in the chopped romaine lettuce.
