Step-by-Step Instructions
  1. Preheat your oven to 200°C (392°F). Peel and cube butternut squash, toss with oil, salt, and pepper, and roast for 15-20 minutes.
  2. Prepare Brussels sprouts by trimming and halving. Toss with oil, salt, and pepper, and roast for 20-30 minutes.
  3. Cook bow tie pasta in salted boiling water until al dente, about 10-12 minutes. Reserve a cup of pasta water before draining.
  4. In a skillet, brown sliced smoked sausage for 5-7 minutes. Transfer to a plate, retaining flavorful bits in the skillet.
  5. Sauté minced garlic in the same skillet for 1 minute, then stir in butter until melted and combined.
  6. Add cooked pasta to the skillet, toss to coat, and season with salt, pepper, and smoked paprika.
  7. Fold in roasted butternut squash, Brussels sprouts, and sausage into the pasta. Mix gently and add fresh thyme.
