  1. In a large pot, pour in 4 cups of filtered water and add a cinnamon stick, 2-3 star anise pods, and 4-5 whole cloves. Place the pot over medium heat and bring the mixture to a gentle boil.
  2. Stir in 1/2 cup of piloncillo until it's fully dissolved. Remove the pot from heat and stir in 1/2 cup of freshly ground coffee.
  3. Cover the pot and let it steep for 5 to 10 minutes, depending on your preferred strength.
  4. Carefully strain the coffee mixture into individual cups using a fine mesh strainer, then serve hot.
  5. Garnish with a sprinkle of cinnamon or a twist of orange peel, if desired.
