Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the pumpkin puree, granulated sugar, brown sugar, whole milk, large egg, and vanilla extract until smooth.
- Add the ground cinnamon, nutmeg, ginger, cloves, and salt to the pumpkin mixture. Stir until well combined.
- In a separate bowl, whisk together the all-purpose flour and baking powder. Gradually mix it into the pumpkin mixture.
- Lightly grease a 9x13 inch baking dish and pour the batter in, spreading evenly.
- Sprinkle the chopped pecans over the top of the batter.
- Carefully pour the boiling water over the entire cobbler mixture.
- Bake in the preheated oven for 50 to 60 minutes, until golden brown.
- Remove from the oven and let cool for about 10 minutes before slicing.
