Ingredients

  • 1 cup Long-grain white rice Brown rice can be used, adjust cooking time.
For the Beef
  • 1 pound Ground beef Can substitute with ground turkey or chicken.
For the Aromatics
  • 1 medium Onion Can substitute with shallots or leeks.
  • 3 cloves Garlic Minced garlic or garlic powder are good substitutes.
For the Sauce
  • 1 cup Milk Almond milk or broth for dairy-free.
  • 1 cup Shredded cheddar cheese Opt for non-dairy cheese for vegan.
  • 1/4 cup Parmesan cheese Grana Padano or nutritional yeast for dairy-free.
  • 2 tablespoons Butter Can swap with olive oil for lighter dish.
For Cooking
  • 2 cups Beef broth (low sodium) Vegetable broth for a meatless version.
  • 1 teaspoon Salt Adjust according to taste.
  • 1 teaspoon Black pepper Adjust according to taste.
  • 1 tablespoon Italian seasoning Substitute with dried herbs if desired.
For Garnishing
  • 1/4 cup Fresh parsley Omit if in a hurry.

Method
 

Cooking Instructions
  1. In a large skillet, melt 1 tablespoon of butter over medium heat. Add the diced onion and sauté for 3-4 minutes until softened and translucent.
  2. Add the ground beef to the skillet, breaking it apart. Cook for about 5-7 minutes until browned, draining any excess fat.
  3. Stir in the minced garlic and cook for an additional 1 minute.
  4. Mix in the uncooked rice, beef broth, Italian seasoning, salt, and pepper, ensuring everything is well combined.
  5. Bring to a boil, reduce heat to low, cover, and simmer for 18-20 minutes until the rice has absorbed most of the broth.
  6. In a separate saucepan, melt the remaining tablespoon of butter over low heat. Whisk in the milk, Parmesan, and cheddar cheese until smooth.
  7. Pour the cheese sauce into the skillet with the beef and rice mixture and stir to combine.
  8. Sprinkle with fresh parsley before serving. Enjoy!
