  • 1 1/2 cups all-purpose flour can use gluten-free flour
  • 1 teaspoon ground cinnamon adjust to taste
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin by lining with muffin liners or greasing with baking spray.
  2. In a large mixing bowl, whisk together the cottage cheese, eggs, maple syrup, melted butter, and vanilla extract until smooth.
  3. In a separate bowl, sift together the flour, cinnamon, baking powder, baking soda, and salt. Mix well.
  4. Add the grated apple to the dry ingredients and fold gently to coat.
  5. Pour the wet mixture into the dry ingredients and fold until just combined, being careful not to overmix.
  6. Scoop the batter into the muffin tin, filling each cup about 2/3 full.
  7. Bake for 20–22 minutes or until golden brown and a toothpick inserted comes out clean.
  8. Let cool for 5 minutes in the tin, then transfer to a wire rack to cool completely.
