- Preheat your oven to 350°F (175°C) and prepare a muffin tin by lining with muffin liners or greasing with baking spray.
- In a large mixing bowl, whisk together the cottage cheese, eggs, maple syrup, melted butter, and vanilla extract until smooth.
- In a separate bowl, sift together the flour, cinnamon, baking powder, baking soda, and salt. Mix well.
- Add the grated apple to the dry ingredients and fold gently to coat.
- Pour the wet mixture into the dry ingredients and fold until just combined, being careful not to overmix.
- Scoop the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for 20–22 minutes or until golden brown and a toothpick inserted comes out clean.
- Let cool for 5 minutes in the tin, then transfer to a wire rack to cool completely.
