Step-by-Step Instructions for Cowboy Queso
  1. In a large skillet, heat a drizzle of oil over medium-high heat. Add the ground beef, cooking for about 5-7 minutes until browned and crumbled. Drain excess grease.
  2. Return the skillet to medium heat and sprinkle in salt, pepper, and red pepper flakes. Pour in the pale ale and let it simmer for 4-5 minutes.
  3. Lower the heat to medium-low and add the Velveeta and pepper jack cheese. Stir for 3-5 minutes until melted and creamy.
  4. Fold in the black beans, red onion, cilantro, and Rotel tomatoes, adjusting consistency as needed.
