  • 1 lb Ground Beef Can substitute with ground turkey or chicken
  • 2 tbsp Olive Oil Can use vegetable oil
  • 1 Onion Chopped; yellow or white onions preferred
  • 2 Garlic Minced; use fresh for better flavor
  • 4 medium Potatoes Thinly sliced; Yukon gold or russet recommended
  • 2 cups Cheddar Cheese Shredded; can substitute mozzarella
  • 1/2 cup Parmesan Cheese Grated; optional
  • 1 tbsp Italian Seasoning Can substitute with oregano and basil
  • 1 tsp Paprika Sweet or smoked variety
  • 1 tsp Salt To taste
  • 1 tsp Pepper To taste
  • 1 cup Beef Broth Can use vegetable broth
  • 1/4 cup Milk Optional; can be omitted
  • 2 Fresh Parsley Chopped; for garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with olive oil.
  2. In a large skillet, heat olive oil over medium heat and sauté the ground beef until browned (5-7 minutes). Drain excess fat and set aside.
  3. In the same skillet, add chopped onion and minced garlic. Sauté for 3-4 minutes until translucent.
  4. Spread the cooked ground beef in the bottom of the greased baking dish. Layer with thinly sliced potatoes, and season with salt, pepper, Italian seasoning, and paprika.
  5. Top with shredded cheddar and grated Parmesan cheese. Pour beef broth around the edges and optionally drizzle with milk.
  6. Cover the baking dish with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes until cheese is golden.
  7. Garnish with fresh parsley before serving. Enjoy your Hobo Casserole hot!
