- Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with olive oil.
- In a large skillet, heat olive oil over medium heat and sauté the ground beef until browned (5-7 minutes). Drain excess fat and set aside.
- In the same skillet, add chopped onion and minced garlic. Sauté for 3-4 minutes until translucent.
- Spread the cooked ground beef in the bottom of the greased baking dish. Layer with thinly sliced potatoes, and season with salt, pepper, Italian seasoning, and paprika.
- Top with shredded cheddar and grated Parmesan cheese. Pour beef broth around the edges and optionally drizzle with milk.
- Cover the baking dish with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes until cheese is golden.
- Garnish with fresh parsley before serving. Enjoy your Hobo Casserole hot!
