  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

  • 1 large egg or flaxseed meal for vegan option
  • 1 teaspoon vanilla extract pure for best flavor
  • 2 cups all-purpose flour spoon and level off for measurement
  • 1 teaspoon ground cinnamon freshly ground for best flavor
  • 1/2 cup brown sugar for sweetness and moisture
For the Cinnamon Swirl
  • 1 teaspoon ground cinnamon fresh for maximum flavor
  • 1/2 cup brown sugar for caramelized swirl

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a mixing bowl, mash three ripe bananas until mostly smooth with a few lumps for texture.
  3. Pour in the melted butter and mix with a wooden spoon until well combined.
  4. Add baking soda and salt, stirring until blended.
  5. Mix in granulated sugar, beaten egg, and vanilla extract until smooth.
  6. Gradually fold in all-purpose flour until just combined, being careful not to overmix.
  7. In a separate bowl, combine ground cinnamon and brown sugar for the swirl.
  8. Scoop half of the banana batter into the greased loaf pan and sprinkle with half of the cinnamon-brown sugar mixture.
  9. Top with remaining banana batter and sprinkle with remaining cinnamon-brown sugar; swirl gently with a knife.
  10. Bake in preheated oven for 60-65 minutes or until a toothpick comes out clean.
  11. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  12. Slice and enjoy warm or as a snack throughout the day.
