Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
- In a mixing bowl, mash three ripe bananas until mostly smooth with a few lumps for texture.
- Pour in the melted butter and mix with a wooden spoon until well combined.
- Add baking soda and salt, stirring until blended.
- Mix in granulated sugar, beaten egg, and vanilla extract until smooth.
- Gradually fold in all-purpose flour until just combined, being careful not to overmix.
- In a separate bowl, combine ground cinnamon and brown sugar for the swirl.
- Scoop half of the banana batter into the greased loaf pan and sprinkle with half of the cinnamon-brown sugar mixture.
- Top with remaining banana batter and sprinkle with remaining cinnamon-brown sugar; swirl gently with a knife.
- Bake in preheated oven for 60-65 minutes or until a toothpick comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Slice and enjoy warm or as a snack throughout the day.
