- Rinse quinoa under cold water, combine with 2 cups water and a pinch of salt in a saucepan. Bring to boil, reduce to low, cover, and simmer for 15 minutes until fluffy.
- In a food processor, combine cilantro, scallions, garlic, lime juice, lime zest, vinegar, and maple syrup. Blend until smooth.
- In a mixing bowl, combine cooled quinoa, rinsed beans, diced cucumber, and remaining scallions. Mix gently.
- Pour the dressing over the salad mixture and toss gently to combine.
- Taste and adjust seasoning. Serve immediately or chill for 4-5 days.
