Ingredients
  

For the Salad
  • 1 cup quinoa rinsed before cooking
  • 1 cup cilantro can substitute with parsley or basil
  • 1 medium cucumber diced
  • 1 can black beans or chickpeas rinsed
  • 2 stalks scallion chopped finely
For the Dressing
  • 2 tablespoons lime juice freshly squeezed
  • 2 tablespoons lime zest
  • 2 cloves garlic minced
  • 2 tablespoons white wine vinegar can substitute with apple cider vinegar
  • 1 tablespoon maple syrup omit for sugar-free

Method
 

Cooking and Preparing
  1. Rinse quinoa under cold water, combine with 2 cups water and a pinch of salt in a saucepan. Bring to boil, reduce to low, cover, and simmer for 15 minutes until fluffy.
  2. In a food processor, combine cilantro, scallions, garlic, lime juice, lime zest, vinegar, and maple syrup. Blend until smooth.
  3. In a mixing bowl, combine cooled quinoa, rinsed beans, diced cucumber, and remaining scallions. Mix gently.
  4. Pour the dressing over the salad mixture and toss gently to combine.
  5. Taste and adjust seasoning. Serve immediately or chill for 4-5 days.
