Ingredients
  

Muffins
  • 1/2 cup Melted Butter Substitute with coconut oil for a dairy-free version.
  • 2 large Eggs No substitute recommended.
  • 1 cup Sourdough Discard Fresh starter may also be used.
  • 3/4 cup Sugar Can be partially replaced with honey or maple syrup.
  • 1 teaspoon Vanilla Extract Pure vanilla is recommended.
  • 1/2 teaspoon Salt Essential for flavor enhancement.
  • 2 cups All-Purpose Flour Can substitute with whole wheat flour.
  • 1 cup Milk Any type of milk, including plant-based.
  • 2 teaspoons Baking Powder Do not omit.
  • 1/2 teaspoon Baking Soda Essential for texture.
  • 1 cup Chocolate Chips Can replace with nuts or omit.
Optional Topping
  • 1/4 cup Extra Chocolate Chips Sprinkle on top before baking.

Method
 

Baking Instructions
  1. Preheat your oven to 350°F (180°C).
  2. In a large mixing bowl, combine melted butter, eggs, sugar, vanilla extract, milk, and sourdough discard. Stir until fully combined.
  3. In a separate bowl, whisk together flour, salt, baking powder, and baking soda. Fold into wet mixture until combined, being careful not to overmix.
  4. Prepare your muffin tin by greasing it or lining it with muffin liners.
  5. Spoon the muffin batter into the cups, filling about 2/3 to 3/4 full. Optionally, sprinkle extra chocolate chips on top.
  6. Bake for 15-20 minutes until golden-brown and a toothpick comes out clean.
  7. Allow the muffins to cool in the tin for about 5 minutes, then transfer to a wire rack to cool completely.

Notes
