  • 4 tablespoons Unsalted Butter Salted butter can also be used.

Preparation Instructions
  1. Preheat your oven to 400°F (200°C). In a large mixing bowl, combine the honey, chipotle chili powder, olive oil, garlic powder, salt, and black pepper. Whisk together until fully blended.
  2. Add the bone-in chicken thighs to the marinade, ensuring each piece is well-coated. Allow them to marinate at room temperature for at least 15 minutes.
  3. While the chicken marinates, peel and chop your russet potatoes into equal chunks. Bring salted water to a boil. Cook the potatoes until fork-tender.
  4. In the same pot, mash the drained potatoes until smooth. Mix in the milk, unsalted butter, and smoked gouda cheese until creamy.
  5. Transfer the marinated chicken thighs to a baking dish and bake for about 25-30 minutes, until the internal temperature reaches 165°F (75°C).
  6. Let the chicken rest before serving alongside the creamy gouda mashed potatoes.
