Method
 

Step-by-Step Instructions
  1. In a large pitcher, combine fresh mint leaves, sugar, and lime juice. Muddle gently for about 30 seconds.
  2. Optional: Strain the mixture through a fine mesh strainer back into the pitcher.
  3. Fill four tall glasses with ice cubes, halfway each glass.
  4. Pour coconut rum and canned coconut milk into the pitcher, stirring well to combine.
  5. Divide the coconut rum mixture among the glasses, filling each about three-quarters full.
  6. Top each glass with sparkling water or club soda.
  7. Garnish with mint sprigs and pomegranate arils, then serve immediately.
