For Serving
  • 4 cups Mixed Greens or spinach/arugula
  • 1 medium Avocado sliced
  • 1 medium Tomato sliced

Step-by-Step Instructions
  1. In a large mixing bowl, combine ground chicken, chopped green onions, diced bell pepper, cilantro, minced garlic, kosher salt, red pepper flakes, and lime juice. Mix until well combined.
  2. Divide the mixture into four equal portions and shape into flat patties about ¾-inch thick.
  3. Heat a skillet over medium-high heat and add olive oil. Wait until it shimmers.
  4. Carefully place patties in the skillet and cook for approximately 2.5 minutes on each side until golden brown and cooked through.
  5. While burgers cook, combine mixed greens with olive oil, lime juice, and a pinch of salt. Toss to coat.
  6. Serve cooked patties on top of mixed greens, topped with avocado and tomato slices, and garnish with cilantro and lime juice.
