  • 1 cup Heavy Cream substitute with whole milk for a lighter option
  • 4 ounces Grated Parmesan Cheese for browning
  • 1 tablespoon Fresh Minced Thyme feel free to double for garnish
  • 1 clove Garlic finely minced
  • 1 ounce Shredded Gruyère Cheese for a delightful crust
  • to taste Salt and Pepper for seasoning

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease a 3-quart baking dish with unsalted butter.
  2. Thinly slice sweet potatoes, parsnips, and beets using a mandoline.
  3. Toss sliced sweet potatoes and parsnips with 4 tablespoons of heavy cream and sliced beets with 2 tablespoons of cream.
  4. Add ½ ounce of grated Parmesan and 1 teaspoon of minced thyme to the sweet potatoes and parsnips.
  5. Pour ¼ cup of heavy cream into the baking dish, sprinkle with ½ ounce of Parmesan cheese and minced garlic.
  6. Layer sweet potatoes, parsnips, and beets in the baking dish.
  7. Sprinkle with salt, pepper, and remaining Parmesan cheese; cover with foil and bake for 30 minutes.
  8. Uncover and sprinkle with shredded Gruyère cheese; return to the oven for 18-20 minutes until golden brown.
