- Cook the pasta by bringing a large pot of salted water to a boil. Add rotini pasta and cook until al dente, about 8-10 minutes. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Season the chicken with Cajun seasoning, salt, and pepper. Cook until golden brown, about 6-7 minutes, then set aside.
- Melt butter in the same skillet over medium heat. Sauté minced garlic until fragrant, about 1 minute. Stir in chicken broth and heavy cream, and simmer for 2-3 minutes.
- Gradually add mozzarella, Parmesan, and cheddar cheeses, stirring until fully melted and the sauce is creamy. Add more broth if too thick.
- Combine the cooked chicken and drained rotini with the sauce in the skillet. Simmer for 2-3 more minutes for flavors to meld.
