Method
 

Step-by-Step Instructions
  1. Cook the pasta by bringing a large pot of salted water to a boil. Add rotini pasta and cook until al dente, about 8-10 minutes. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Season the chicken with Cajun seasoning, salt, and pepper. Cook until golden brown, about 6-7 minutes, then set aside.
  3. Melt butter in the same skillet over medium heat. Sauté minced garlic until fragrant, about 1 minute. Stir in chicken broth and heavy cream, and simmer for 2-3 minutes.
  4. Gradually add mozzarella, Parmesan, and cheddar cheeses, stirring until fully melted and the sauce is creamy. Add more broth if too thick.
  5. Combine the cooked chicken and drained rotini with the sauce in the skillet. Simmer for 2-3 more minutes for flavors to meld.
  6. Remove from heat, garnish with fresh parsley, serve hot and enjoy.
