Method
 

Cheese Dip Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium saucepan, add olive oil and cook crushed garlic for about 1 minute.
  3. Pour in the whole milk and Guinness, bringing to a gentle simmer.
  4. Add the softened cream cheese and stir until melted and smooth.
  5. Gradually add the cheeses and Dijon mustard, stirring until creamy.
Pretzel Preparation
  1. Halve each biscuit and roll into balls for pretzel shapes.
  2. Boil 6 cups of water with baking soda and gently drop in biscuit balls for 60 seconds.
  3. Use a slotted spoon to remove them and place them in a baking dish.
  4. Brush with egg wash and sprinkle with coarse salt.
  5. Pour cheese dip into the center and top with reserved cheddar if desired.
Baking
  1. Bake in preheated oven for 32-35 minutes until golden brown.
  2. Remove from oven and garnish with chives before serving.
