Ingredients
  

Dressing
  • 1 cup Plain Greek Yogurt can substitute with dairy-free yogurt for a vegan option
  • 2 tbsp Mayonnaise use vegan mayo for a plant-based version
  • 1 whole Fresh Lemon Juice provides acidity and brightness
  • 1 tbsp Dijon Mustard adds depth and a slight kick
  • to taste Kosher Salt enhances flavor
  • to taste Black Pepper fresh cracked is recommended
Salad Base
  • 2 cans Chickpeas drained and rinsed
  • 2 whole English Cucumbers diced, don't require peeling
  • 1/3 cup Red Onion finely diced
  • 2 tbsp Fresh Dill can substitute with fresh parsley or omit
  • 2 tbsp Fresh Parsley adds freshness
  • 1/4 cup Feta Cheese optional; omit for a vegan salad

Method
 

Dressing Preparation
  1. In a medium bowl, combine Greek yogurt, mayonnaise, lemon juice, Dijon mustard, and a pinch of kosher salt and black pepper. Whisk together until smooth.
  2. Ensure all ingredients are fully incorporated.
Salad Assembly
  1. In a large mixing bowl, add chickpeas, cucumbers, red onion, dill, and parsley. Gently toss together.
  2. Pour the prepared yogurt dressing over the salad base and gently fold until combined.
Optional Cheese Addition
  1. If desired, crumble feta cheese into the salad and fold it gently.
Chill and Serve
  1. Cover and refrigerate for at least 15 minutes before serving.
  2. Serve chilled.
