Cooking Steps
- Begin by slicing the leeks thinly. In a large skillet, melt 2 tablespoons of butter over medium heat. Add the leeks and sauté for 10-15 minutes until they become soft and caramelized.
- Once the leeks are caramelized, introduce 8 ounces of chopped mushrooms. Stir them in and let them cook for an additional 5-7 minutes until softened.
- Reduce the heat to low, then pour in 1 cup of heavy cream gradually, stirring continuously. Next, add 1 cup of grated Gruyere cheese, whisking until melted and smooth.
- Cook your choice of pasta according to the package instructions. Once al dente, drain the pasta, reserving a little water. Add to the skillet, tossing it in the sauce.
- Plate your pasta, garnish with freshly chopped herbs, and serve immediately.
