  • 8 ounces Pasta Any type like fettuccine or penne
For the Veggies
  • 2 medium Leeks Sliced thinly
  • 8 ounces Mushrooms Chopped, can be button or cremini
For the Sauce
  • 1 cup Gruyere Cheese Grated, can substitute with Emmental or aged cheddar
  • 2 tablespoons Butter Can use olive oil for dairy-free
  • 1 cup Heavy Cream Can use half-and-half for a lighter alternative

Method
 

Cooking Steps
  1. Begin by slicing the leeks thinly. In a large skillet, melt 2 tablespoons of butter over medium heat. Add the leeks and sauté for 10-15 minutes until they become soft and caramelized.
  2. Once the leeks are caramelized, introduce 8 ounces of chopped mushrooms. Stir them in and let them cook for an additional 5-7 minutes until softened.
  3. Reduce the heat to low, then pour in 1 cup of heavy cream gradually, stirring continuously. Next, add 1 cup of grated Gruyere cheese, whisking until melted and smooth.
  4. Cook your choice of pasta according to the package instructions. Once al dente, drain the pasta, reserving a little water. Add to the skillet, tossing it in the sauce.
  5. Plate your pasta, garnish with freshly chopped herbs, and serve immediately.
