  • 2 Eggs For eggless variant, use yogurt (1/4 cup per egg).

For the Filling
  • 1/2 cup Parmesan Cheese Grana Padano can be used for similar flavor.
  • 1 cup Mozzarella Cheese Any melting cheese, such as Gouda can be used as a substitute.
  • 1 tablespoon Fresh Parsley Optional to omit for stronger garlic flavor.
  • 3 heads Garlic Core flavor component, roasted for mellowness.

Method
 

Preparation
  1. Prepare the garlic by peeling three heads and placing in a ramekin. Drizzle with olive oil, add a pinch of salt, cover with foil, and roast at 302°F for about 1 hour and 45 minutes until soft and caramelized.
  2. In a large mixing bowl, combine warm milk, active dry yeast, and honey. Stir gently and let sit for 10-15 minutes until frothy.
  3. Add eggs, all-purpose flour, bread flour, salt, and granulated sugar to the sponge mixture. Mix with a stand mixer on medium-low for about 15 minutes. Gradually incorporate softened butter and knead for an additional 10 minutes until dough is soft and slightly sticky.
  4. Roll out dough onto a floured surface, spread garlic butter, sprinkle mozzarella and parmesan, cut into strips, and roll each piece into spirals.
  5. Place rolled dough into a lined baking pan and let proof for 30 minutes in a warm environment. Preheat oven to 355°F. Brush tops with egg wash and bake for 25-30 minutes until golden brown.
